How Often Should You Oil a Wooden Cutting Board?

How often to oil a wooden cutting board depends on how new the board is and how often it gets used, but there is a simple schedule that works for almost every board once you know the pattern.

Getting the timing right is what separates a board that lasts decades from one that cracks and warps within a year or two.

New boards need more frequent oiling

A brand-new cutting board has not yet built up a protective layer of oil in its grain, so it needs more attention early on. Oil a new board once a week for the first month, applying a generous coat, letting it sit for 20 minutes, then wiping away the excess.

This initial period is what builds the base protection that makes every future oiling more effective, since the wood is absorbing less each time and holding onto more of what it already has.

The maintenance schedule after that

Once a board is past its first month, oiling once every 3 to 4 weeks is the standard for a board used daily or several times a week. A board used only occasionally, like a serving piece that comes out for entertaining, can typically go 6 to 8 weeks between oilings.

Boards that get washed frequently need oiling more often than boards that see lighter use, since each wash strips away some of the surface oil along with the food residue.

Let the board tell you when it's due

The oiling schedule is a starting point, not a strict rule. The board itself gives clear signs when it needs attention. If water no longer beads up on the surface and instead soaks in immediately, that is the clearest sign the wood needs oil. A dry, dull, or slightly lightened appearance compared to when the board was freshly oiled is another reliable indicator.

When in doubt, oil it. It is nearly impossible to over-oil a board within a normal maintenance routine, since any oil the wood does not need simply gets wiped away and does not soak in.
